It’s not a traditional curry by any means, just something I like to eat when I’m hungry and it’s rainy outside,” says Lia.
i made this for dinner tonight, and we loved it! i didn’t have all the spices, so i added some curry powder and a little cayenne (not traditional, i know i know), and i threw in a bunch of mushrooms i had in the fridge and needed to use up. stephen ate it with leftover rice, but i ate mine without, and we both agreed it was delicious. i think it might make about six 1-cup servings, so good thing we liked it…
